Bellwether Sawmill Creek Riesling, offers a bouquet that full ofaromas of white peach and lime. These continue onto the viscous palate of stone fruits and plentiful New York citrus flavors. Green apple and beach blend with a subtle sweetness, concluding with a medium-lengthed, slightly dry finish.
After the grapes were de-stemmed and pressed, the juice was settled and inoculated with AMH yeast. After a six month fermentation, the wine was racked from gross lees and fined with an algae base. Bottled between May and June, the Sawmill vineyards were planted in 2005 on the east Seneca Lake loam soils.
